Easiest Chile Verde Ever!
1 ½ Pounds Pork Loin, roasted and cut into ¼ inch cubes or shredded
1 Onion, chopped
4-5 Garlic Cloves, chopped
1 Tablespoon Olive Oil
1 40-oz Jar Hatch Valley Flame Roasted Green Chile Sauce from Costco, or any of your favorite brands
*NOTE: If cooking raw pork loin, roast at 375F for 35-40 minutes or put in slow cooker for 4 hours on high. Internal temp should be 145 degrees.
Sauté onion and garlic in olive oil, about 7 minutes.
Add in pork loin pieces.
Pour full jar of green chile sauce over the pork.
Lower heat and simmer for 20 minutes.
Serve with white or brown rice and/or tortillas of your choice.
