Derby Duo Stuffed Mushrooms
Cream Cheese and Chive Stuffed Mushrooms Recipe
Ingredients:
20-25 Mushrooms
15 oz Philadelphia Chive and Onion Cream Cheese
3 Tbsp of Smoked Paprika
Directions:
Set oven to Broil
De-stem the mushrooms
Place them on a cookie sheet covered with silver foil.
Spoon dollops of the chive and onion cream cheese into each mushroom cap.
Sprinkle smoked paprika on each one to your taste.
Set timer for 10 minutes
Place in oven.
Remove from oven.
Let sit for 5 minutes then serve
French Onion Stuffed Mushrooms Recipe:
Ingredients:
1 large Onion, roughly chopped
¼ cup Panko Breadcrumbs
20-25 Mushrooms, about 2 LBS, stems removed
Sliced Gruyere or other Swiss Cheese, cut into quarters
½ teaspoon Herbs de Provence
Olive Oil
Salt and Pepper
Directions:
Heat a couple tablespoons of Olive Oil in a pan over low heat.
Caramelize the onions by slowly sauteing over low heat, stirring occasionally, about 20-25 minutes, then cool.
While onions are cooling, toast the panko in the pan with the Herbs de Provence.
In a bowl, combine the cooled onions with the panko breadcrumbs and, and season with Salt and Pepper.
Then stir to mix.
Toss the mushroom caps with 2 Tablespoons of Olive Oil.
Then lay the mushrooms out on a sheet pan (line with foil if you are broiling the mushrooms in the oven) and spoon the onion mixture into each one, pressing gently down on it to lock it into the mushroom.
Top each mushroom with sliced cheese.
Broil in the oven for 5-10 minutes or alternately air fry in the air fryer at 360 degrees for 8-10 minutes (airfryer heats vary).
