French Onion Burgers



Ingredients:

2 Burgers

1 Onion, chopped

2 Cups Beef Stock or Broth

Herbs de Provence

2 Brioche buns

Grated Gruyere or other Swiss cheese


Directions:

Heat a deep sided skillet over medium high heat.

Season the burgers with pepper and salt.

Add enough beef broth that will cover the burgers – about 2 cups – and bring to a simmer.

Stir in 1 Teaspoon of Herbs de Provence.

Add the chopped onions and cook them down until they are soft and translucent – about 20 minutes.

Add the burgers and nestle them into the poaching liquid.

Cook burgers on one side until they are no longer pink – about 5 minutes – then flip.

Cook a few minutes more on the other side. Burgers should be around 140 degrees for medium rare.

Top each burger with a handful of grated Gruyere or other Swiss cheeses.

Toast the Brioche buns and spread with butter or a garlic aioli.

Put each burger with cheese onto a bun and top with a spoonful or two of the onion mixture.
