Meyer Lemon Simple Syrup



Ingredients:

15 to 20 Meyer lemons squeezed of juice

8 cups of water

8 cups of sugar


Directions:

Squeeze the juice from the Meyer lemons and save for other cocktails.

Remove the lemon pulp from the lemon, peels.

Save the peels for garnish and cocktails.

Place the lemon pulp in a big pot.

Add 8 cups of water.

Add 8 cups of sugar.

Bring to a boil for at least two minutes.

Continue to stir.

Remove the pot from the stove and let it cool for at least an hour.

Strain the syrup from the pulp into a large pitcher.

Pour the simple syrup into bottles or containers.

You should have a boat 50 to 60 ounces of fluid.

You can freeze for up to 6 months.
