Pina Colada Pineapple Bites


1 can Pineapple rings or fresh pineapple sliced in rings

12 oz. canned Coconut milk

2 eggs

1 cup of flour

7 oz. Coconut flakes unsweetened and shredded

2 Cups Oil either vegetable, olive, or avocado

8 oz. cream cheese

1 cup powdered sugar

4 oz. Dark Rum

4 oz. Coconut Rum


Place pineapple slices in a bowl and then add Dark Rum and Coconut Rum for no more than an hour.

Remove pineapple rings and pat dry on paper towel.

Pour 2 cups of oil in frying pan. Turn on high until boiling.

Mix 2 eggs and coconut milk into a bowl until smooth.

Take pineapple rings and dip into bowl with flour.

Take floured pineapple rings and dip into mix of eggs and coconut milk.

Then place pineapple rings into bowl of coconut flakes.

Place 4 pineapple rings with coconut flake coating into the boiling pan of oil.

Flip pineapple rings after 30 seconds.

Cook for 30 second more.

Remove from boiling oil.

Let them sit on a plate for 5 minutes.

Prepare dipping sauce by mixing the cream cheese, powdered sugar, and 4 oz. of the rum that marinated the pineapple slices.

Whisk until smooth.

Serve alongside the pineapple slices.
