Salt & Vinegar Mashed Potatoes

Ingredients:
3 pounds Yukon Gold Potatoes
Apple Cider Vinegar
2-3 tablespoons Butter
Olive Oil
Salt and Pepper
Directions:
Quarter the potatoes and put them in a pot and cover with cold water.
Boil on medium high for 20 minutes.
Drain the potatoes into a large bowl.
Reserve 1 cup of potato water.
Add ½ cup of potato water to the potatoes.
Add 2-3 tablespoons of butter and 1/2 cup olive oil (adjust according to your health goals).
Mash the potatoes to the consistency you like (we like a rustic chunky texture for this).
Add the 1/3 cup apple cider vinegar, 1 teaspoon of pepper and 2 teaspoons of salt (again, you can add more or less salt based on your health goals).
Stir to combine.
